Makdous (Arabic: المكدوس or sometimes المقدوس) are oil cured eggplants. Part of Levantine cuisine :- (( Jordan , Lebanon, Palestine, Israel, Syria )), they are tiny, tangy eggplants stuffed with walnuts, red pepper, garlic, olive oil and salt. Sometimes chilli powder is added.
