Mataz (Adyghe: Мэтазэ) are dumplings in Circassian and some other Caucasian cuisines, closely related to mantı, and other Asian dumplings, such as buuz, baozi, jiaozi, mandu, and momo. Mataz dumplings typically consist of a spiced meat mixture, usually lamb or ground beef, with greens and onions, put in a dough wrapper, either boiled or steamed. Mushrooms, potatoes, or cheese may be used in place of meat.
