Hújiāo bǐng (Chinese: 胡椒餅; pinyin: Hújiāo bǐng; Pe̍h-ōe-jī: hô͘-chio-piáⁿ; literally: "black pepper cake") is a Chinese snack composed of meat marinated with sugar, soy sauce, black pepper, and scallions encased in a large, flaky biscuit-like bread; this wrapping is not leavened with yeast. The biscuit of the hújiāo bǐng is not oily because the meat filling is already fatty and juicy.
