Mascarpone (/ˌmæskɑrˈpoʊniː/, or /ˈmɑːskərpoʊn/; Italian: [maskarˈpoːne]) is an Italian cheese made from cream, coagulated by the addition of certain acidic substances, such as lemon juice, vinegar, citric acid or acetic acid. It is recognized as a Prodotto agroalimentare tradizionale (traditional regional food product).
