Paul Saltman (11 April 1928 – 27 August 1999) was a Professor of Biology at the University of California, San Diego for more than three decades, and an internationally renowned nutrition expert. He received a B.S. in chemistry (1949) and Ph.D. in biochemistry (1953) from the California Institute of Technology.
